Soft taste, delicate aroma of wheat, oats, corn or other grains. These qualities are the main advantage of malt mash. But to achieve such a result, you need to carefully select alcoholic yeast for grain mash. You can buy a suitable strain based on a number of signs:

  • Fermentation efficiency at a high level. Due to the absorption of mono- and disaccharides by fungi, the raw material ferments very quickly.
  • Some strains only take a few days to ferment.
  • Tolerance of high alcohol content. Since alcohol shortens the duration of fermentation, breeders have developed yeast for malt mash with strong immunity that can withstand strength up to 18-20%. Their bacteria feed much longer and, accordingly, produce more alcohol.
  • Heat resistance. Increased nutrition increases the temperature of the fluid. Therefore, the best yeast for grain mash are those that continue to be active at a temperature of +35°C.
  • Active formation of esters. Each strain is responsible for creating its own unique taste and aroma for a specific drink.
